Method

  1. 1.Combine rye, sweet vermouth, cep mushroom syrup, and bitters in a mixing glass with ice.
  2. 2.Stir for 30 seconds until silky and well-chilled.
  3. 3.Strain into a chilled Nick & Nora glass.
  4. 4.Garnish with a brandied cherry.

Notes

  • For cep mushroom syrup: steep 30g dried porcini (cep) mushrooms in 250ml hot 1:1 simple syrup for 2 hours, fine-strain through cheesecloth.
  • The mushroom adds earthy depth and umami to the classic Manhattan template.
