Signature of Dante, NYC — Naren Young's version became famous for the 'fluffy' orange juice technique, which transforms a simple two-ingredient drink into something extraordinary.

  1. 1.Juice fresh oranges through a Hamilton Beach commercial juicer (or similar centrifugal juicer) to aerate the juice and create the signature fluffy, foamy texture. The juice should look like a smoothie — thick, frothy, and almost creamy.
  2. 2.Build Campari in a tall highball glass filled with ice.
  3. 3.Top with the fluffy orange juice — it should form a thick, pillowy foam on top.
  4. 4.Stir gently once to barely integrate.
  5. 5.Garnish with an orange half-wheel.

Notes

  • The key is the orange juice texture. A standard citrus press won't work — you need a centrifugal juicer that whips air into the juice. Dante uses a Hamilton Beach commercial juicer.
  • Fresh-squeezed only. The juice should be used within minutes of juicing for maximum foam.
