Method

  1. 1.Combine all ingredients in a shaker without ice and dry shake vigorously for 10 seconds to emulsify the egg white.
  2. 2.Add ice and shake hard for another 12 seconds.
  3. 3.Double-strain into a coupe glass.
  4. 4.Allow the foam to settle and rise into a dome.
  5. 5.Garnish with a dehydrated cucumber chip or edible flower on the foam.
