  1. 1.Combine rye, beetroot shrub, lemon juice, and egg white in a shaker.
  2. 2.Dry shake vigorously for 10 seconds.
  3. 3.Add ice and shake hard for 12 seconds.
  4. 4.Double-strain into a coupe glass.
  5. 5.Dash Angostura bitters on the foam.

Notes

  • For beetroot shrub: juice 2 raw beets, combine with equal parts apple cider vinegar and sugar, stir until dissolved, and refrigerate for 24 hours.
  • The beetroot adds earthy sweetness and a striking ruby color.
