Ingredients
- Tequila Reposado1.5 oz
- Lime Juice0.75 oz
- Pineapple-Achiote Syrup0.75 oz
- Triple Sec0.5 oz
- Chile de Arbol Tincture3 dashes
Method
- 1.Rim half a rocks glass with chile-lime salt.
- 2.Combine tequila, lime juice, pineapple-achiote syrup, and triple sec in a shaker with ice.
- 3.Shake for 12 seconds.
- 4.Strain into the prepared glass over fresh ice.
- 5.Dash the chile de arbol tincture on top for aroma and gentle heat.
Notes
- For pineapple-achiote syrup: simmer 250g pineapple chunks, 1 tsp achiote paste, 200g sugar, and 200ml water for 20 min, then fine-strain.
- For chile de arbol tincture: toast 6 dried chiles de arbol, steep in 200ml high-proof vodka for 48 hours, strain.
