Method
- 1.Combine rum, lime cordial, and simple syrup in a blender.
- 2.Add ice and blend on high until completely smooth — about 15-20 seconds.

Notes
- The lime cordial (made from lime oleo saccharum and citric acid) eliminates the iciness and inconsistency that fresh citrus creates in frozen drinks. The oils and acid integrate more smoothly with the ice matrix, producing a silkier, more uniform texture.
