Method

  1. 1.Combine Aperol, lemon juice, and simple syrup in a blender.
  2. 2.Add ice and blend on high for 15 seconds.
  3. 3.Add Prosecco and pulse 2-3 times just to incorporate — do not over-blend or you'll lose all the carbonation.
  4. 4.Pour into a large wine glass.
  5. 5.Garnish with an orange slice.

Notes

  • Add the Prosecco last and pulse gently — you want to keep some fizz in the final drink.
  • The frozen version uses more Aperol than the classic 3-2-1 spritz ratio because cold mutes bitterness.
  • Best served on a hot day. It melts fast, so drink promptly.
