Ingredients
- Hendrick's Gin1.5 oz
- St-Germain Elderflower Liqueur0.75 oz
- Lemon Juice0.75 oz
- Lavender Honey Syrup0.5 oz
- Egg White1 oz
Method
- 1.Combine all ingredients in a shaker without ice.
- 2.Dry shake vigorously for 10 seconds to emulsify the egg white.
- 3.Add ice and shake hard for another 12-15 seconds.
- 4.Double-strain into a chilled coupe glass.
- 5.Garnish with a few drops of lavender bitters on the foam.
Notes
- For lavender honey syrup: steep 2 tbsp dried lavender in 1 cup hot honey-water (equal parts honey and water) for 15 minutes, fine-strain.
- Hendrick's cucumber-rose botanicals pair naturally with the elderflower and lavender.
