Method

  1. 1.Combine strawberries and sugar in a bowl. Muddle gently.
  2. 2.Cover and refrigerate for 24-48 hours — sugar will draw out juice.
  3. 3.Strain out fruit solids, pressing gently.
  4. 4.Add apple cider vinegar to the strawberry syrup, stir well.
  5. 5.Bottle and refrigerate.

Notes

  • Cold-process method preserves bright, fresh flavor.
  • Lasts 4-6 weeks refrigerated.
  • Excellent in gin drinks, vodka sodas, or as a non-alcoholic mixer with soda.
