Ingredients
- Ripe Peaches500 grams
- Sugar400 grams
- White Wine Vinegar300 ml
Method
- 1.Combine sliced peaches and sugar. Toss gently.
- 2.Cover and refrigerate 24-48 hours.
- 3.Strain, pressing fruit gently.
- 4.Add white wine vinegar. Stir and bottle.
- 5.Refrigerate.
Notes
- Lasts 4-6 weeks refrigerated.
- White wine vinegar is delicate — lets the peach flavor lead.
- Excellent with bourbon, vodka, or prosecco.
