Method

  1. 1.Combine sliced peaches and sugar. Toss gently.
  2. 2.Cover and refrigerate 24-48 hours.
  3. 3.Strain, pressing fruit gently.
  4. 4.Add white wine vinegar. Stir and bottle.
  5. 5.Refrigerate.

Notes

  • Lasts 4-6 weeks refrigerated.
  • White wine vinegar is delicate — lets the peach flavor lead.
  • Excellent with bourbon, vodka, or prosecco.
