Ingredients
- Dark Rum1.5 oz
- Campari0.75 oz
- Pineapple Juice1.5 oz
- Lime Juice0.5 oz
- Demerara Syrup0.5 oz
- Water0.75 oz
Method
- 1.Combine rum, Campari, pineapple juice, lime juice, and demerara syrup.
- 2.If freezing: add water for dilution. Freeze. Pour over fresh ice in a rocks glass. Garnish with a pineapple wedge.
- 3.If shaking to order: omit the water. Shake all ingredients hard with ice for 12 seconds. Strain over fresh ice in a rocks glass. Garnish with a pineapple wedge.
Notes
- Frozen batch: the pineapple juice adds body, so this freezes to a slightly slushy texture. Dilution water keeps it balanced. Keeps 1-2 weeks frozen (citrus degrades).
- Shaking to order: no added water — the shake provides dilution and a frothier texture from the pineapple juice.
- Use fresh pineapple juice if possible — canned works but is sweeter.
