Korean preserved citrus. Works with any citrus — lemon, orange, grapefruit, or calamansi.

Ingredients

Method

  1. 1.Slice citrus thinly into rounds, removing seeds.
  2. 2.Layer slices and sugar alternately in a clean jar.
  3. 3.Seal. Keep at room temperature 3-5 days, shaking daily.
  4. 4.Move to refrigerator. Ready to use after 1 week.
  5. 5.Strain liquid for a clean syrup, or use slices as garnish.

Notes

  • Lasts 2-3 months refrigerated.
  • Unlike oleo saccharum, this preserves the whole fruit including juice and pith.
  • The slight bitterness from pith adds complexity — great for old fashioned riffs.
