Korean preserved citrus. Works with any citrus — lemon, orange, grapefruit, or calamansi.
Ingredients
- Lemons or Oranges500 grams
- Sugar500 grams
Method
- 1.Slice citrus thinly into rounds, removing seeds.
- 2.Layer slices and sugar alternately in a clean jar.
- 3.Seal. Keep at room temperature 3-5 days, shaking daily.
- 4.Move to refrigerator. Ready to use after 1 week.
- 5.Strain liquid for a clean syrup, or use slices as garnish.
Notes
- Lasts 2-3 months refrigerated.
- Unlike oleo saccharum, this preserves the whole fruit including juice and pith.
- The slight bitterness from pith adds complexity — great for old fashioned riffs.
