  1. 1.Add dried butterfly pea flowers to gin in a sealed jar.
  2. 2.Infuse at room temperature for 4-8 hours only — color develops fast.
  3. 3.Fine strain through coffee filter.
  4. 4.Bottle and store away from light.

Notes

  • Vivid indigo-blue gin. Turns pink-purple when citrus is added — pH-reactive.
  • Spectacular in color-changing G&Ts and Martinis.
  • Flavor is subtle, earthy-floral — the visual is the hook.
