Method

  1. 1.Lightly toast all spices in a dry pan for 2 minutes.
  2. 2.Combine toasted spices with bourbon in a large jar.
  3. 3.Seal and steep for 2 weeks, shaking every few days.
  4. 4.Fine strain through cheesecloth, then coffee filter.
  5. 5.Bottle in dasher bottles.

Notes

  • Shelf stable indefinitely.
  • This is an Angostura-style aromatic bitters. Gentian root is the backbone.
  • Cinchona bark adds quinine-like bitterness. Available from specialty spice shops.
  • Age for an additional 2 weeks after straining for a smoother profile.
