Method

  1. 1.Combine fat-washed bourbon, syrup, and bitters in a glass.
  2. 2.Add a large ice cube, stir gently 15 seconds.
  3. 3.Garnish with an orange peel.

Notes

  • Fat-wash: add 2 oz melted bacon fat (or brown butter) per 750ml bourbon.
  • Stir, let sit at room temp 4 hours, then freeze overnight.
  • Scrape off solidified fat. Fine strain through cheesecloth and coffee filter.
