Fat-Washed Old Fashioned

Ingredients
- Bourbon2 oz
- Demerara Syrup0.25 oz
- Angostura Bitters2 dashes
Method
- 1.Combine fat-washed bourbon, syrup, and bitters in a glass.
- 2.Add a large ice cube, stir gently 15 seconds.
- 3.Garnish with an orange peel.
Notes
- Fat-wash: add 2 oz melted bacon fat (or brown butter) per 750ml bourbon.
- Stir, let sit at room temp 4 hours, then freeze overnight.
- Scrape off solidified fat. Fine strain through cheesecloth and coffee filter.
