Clarified Milk Punch

Ingredients
- Rum750 ml
- Lemon Juice250 ml
- Simple Syrup250 ml
- Black Tea250 ml
- Whole Milk250 ml
Method
- 1.Combine rum, lemon juice, syrup, and tea. Stir well.
- 2.Heat milk to just warm, then slowly pour the cocktail mix into the milk.
- 3.The acid will curdle the milk — this is correct. Do not stir.
- 4.Let sit for 1 hour at room temperature, then refrigerate overnight.
- 5.Strain through a cheesecloth-lined sieve. Do not press the curds.
- 6.Pass through a coffee filter for crystal clarity. Bottle and refrigerate.
- 7.Serve chilled, neat or over a single large cube.
