White Miso Syrup

Used in Katana Kitten's Miso Old Fashioned.
Ingredients
- White Miso Paste60 grams
- Sugar250 grams
- Hot Water250 ml
Method
- 1.Dissolve sugar in hot water, stirring until clear.
- 2.Whisk in white miso paste until fully incorporated.
- 3.Fine strain through a mesh sieve to remove any solids.
- 4.Bottle and refrigerate.
Notes
- Lasts 2-3 weeks refrigerated.
- Use shiro (white) miso — red miso is too intense for cocktails.
