Ingredients
- Sugar500 grams
- Water500 ml
- Fresh Thyme Sprigs20 grams
Method
- 1.Dissolve sugar in water over low heat.
- 2.Add thyme sprigs and bring to a bare simmer for 2 minutes.
- 3.Remove from heat and steep an additional 15 minutes.
- 4.Fine strain through mesh, pressing gently.
- 5.Bottle and refrigerate.
Notes
- Floral-herbaceous. Use in gin sours, Bee's Knees variants, and stone fruit cocktails.
- Lasts 3-4 weeks refrigerated.
- Lemon thyme is an excellent variation.
