Method

  1. 1.Dissolve sugar in water over low heat.
  2. 2.Add thyme sprigs and bring to a bare simmer for 2 minutes.
  3. 3.Remove from heat and steep an additional 15 minutes.
  4. 4.Fine strain through mesh, pressing gently.
  5. 5.Bottle and refrigerate.

Notes

  • Floral-herbaceous. Use in gin sours, Bee's Knees variants, and stone fruit cocktails.
  • Lasts 3-4 weeks refrigerated.
  • Lemon thyme is an excellent variation.
