Ingredients
- Strawberries (hulled500 grams
- Sugar500 grams
- Water250 ml
Method
- 1.Combine strawberries and sugar in a bowl. Muddle lightly and let macerate for 2-4 hours until juicy.
- 2.Transfer to a saucepan, add water, and heat over low until sugar dissolves. Do not boil.
- 3.Let steep for 30 minutes off heat.
- 4.Strain through a fine mesh strainer, pressing gently on the fruit — don't force the pulp through or the syrup will be cloudy.
- 5.Bottle and refrigerate.
Notes
- Lasts 2-3 weeks refrigerated.
- The maceration step is what gives this syrup real strawberry flavor — don't skip it.
- Use in daiquiris, lemonades, spritzes, or anywhere you want fresh strawberry flavor.
