Method

  1. 1.Combine chopped peaches and sugar in a bowl. Muddle lightly and let macerate for 2-4 hours.
  2. 2.Transfer to a saucepan, add water, and heat over low until sugar dissolves.
  3. 3.Simmer gently for 10 minutes.
  4. 4.Remove from heat and let cool.
  5. 5.Strain through a fine mesh strainer, pressing gently. Bottle and refrigerate.

Notes

  • Lasts 2 weeks refrigerated.
  • White peaches give a more delicate, floral syrup; yellow peaches give a bolder, more assertive flavor.
  • Essential for Bellinis and peach-based cocktails. Also excellent in iced tea.
