Ingredients
- Ripe Peaches (pitted500 grams
- Sugar500 grams
- Water250 ml
Method
- 1.Combine chopped peaches and sugar in a bowl. Muddle lightly and let macerate for 2-4 hours.
- 2.Transfer to a saucepan, add water, and heat over low until sugar dissolves.
- 3.Simmer gently for 10 minutes.
- 4.Remove from heat and let cool.
- 5.Strain through a fine mesh strainer, pressing gently. Bottle and refrigerate.
Notes
- Lasts 2 weeks refrigerated.
- White peaches give a more delicate, floral syrup; yellow peaches give a bolder, more assertive flavor.
- Essential for Bellinis and peach-based cocktails. Also excellent in iced tea.
