Ingredients
- Sugar500 grams
- Water500 ml
- Fresh Pandan Leaves8 each
Method
- 1.Knot pandan leaves tightly to release aroma.
- 2.Combine with water in a saucepan, bring to a gentle simmer.
- 3.Simmer for 15 minutes until water turns pale green.
- 4.Stir in sugar until dissolved.
- 5.Steep an additional 10 minutes.
- 6.Fine strain, bottle, and refrigerate.
Notes
- Signature Southeast Asian flavor — vanilla-nutty-grassy.
- Use in daiquiris, piña coladas, and coconut cocktails.
- Fresh leaves only — frozen works but dried does not.
- Lasts 2 weeks refrigerated.
