Method

  1. 1.Knot pandan leaves tightly to release aroma.
  2. 2.Combine with water in a saucepan, bring to a gentle simmer.
  3. 3.Simmer for 15 minutes until water turns pale green.
  4. 4.Stir in sugar until dissolved.
  5. 5.Steep an additional 10 minutes.
  6. 6.Fine strain, bottle, and refrigerate.

Notes

  • Signature Southeast Asian flavor — vanilla-nutty-grassy.
  • Use in daiquiris, piña coladas, and coconut cocktails.
  • Fresh leaves only — frozen works but dried does not.
  • Lasts 2 weeks refrigerated.
