Method

  1. 1.Make a hot simple syrup: dissolve sugar in water over low heat.
  2. 2.Remove from heat and cool to 70°C / 160°F.
  3. 3.Add mint leaves, steep for 10 minutes only.
  4. 4.Fine strain immediately — over-steeping turns mint bitter and hay-like.
  5. 5.Bottle and refrigerate.

Notes

  • Bright green, fresh mint flavor — far superior to store-bought.
  • Use in juleps, mojitos, and mint-forward sours.
  • Lasts 2-3 weeks refrigerated.
