Ingredients
- Sugar500 grams
- Water500 ml
- Fresh Mint Leaves50 grams
Method
- 1.Make a hot simple syrup: dissolve sugar in water over low heat.
- 2.Remove from heat and cool to 70°C / 160°F.
- 3.Add mint leaves, steep for 10 minutes only.
- 4.Fine strain immediately — over-steeping turns mint bitter and hay-like.
- 5.Bottle and refrigerate.
Notes
- Bright green, fresh mint flavor — far superior to store-bought.
- Use in juleps, mojitos, and mint-forward sours.
- Lasts 2-3 weeks refrigerated.
