Method

  1. 1.Combine chopped mango and sugar in a bowl. Muddle and let macerate for 2-4 hours.
  2. 2.Transfer to a saucepan, add water, and heat over low until sugar dissolves.
  3. 3.Simmer gently for 10 minutes to extract full mango flavor.
  4. 4.Remove from heat and let cool.
  5. 5.Blend briefly, then strain through a fine mesh strainer. Bottle and refrigerate.

Notes

  • Lasts 2 weeks refrigerated.
  • Use Alphonso or Ataulfo mangoes if available — they have the most intense flavor.
  • Excellent in margaritas, rum punches, and lassi-style cocktails.
