Ingredients
- Lime Peels8 each
- Sugar250 grams
- Lime Juice250 ml
- Citric Acid4 grams
Method
- 1.Peel limes using a Y-peeler, avoiding all white pith.
- 2.Toss peels with sugar in a bowl and muddle gently to bruise.
- 3.Cover and let sit 4-8 hours (overnight is ideal) until the sugar draws out the citrus oils — this is the oleo saccharum.
- 4.Strain out the peels, pressing firmly to extract all the oily syrup.
- 5.Combine the oleo with fresh lime juice and citric acid. Stir until dissolved.
- 6.Bottle and refrigerate.
Notes
- This is the proper way to make lime cordial — the oleo saccharum captures the essential oils from the peel, giving you a cordial with far more depth and complexity than lime juice + sugar.
- The citric acid adds brightness and shelf stability. Adjust to taste — more acid for a sharper cordial.
- Lasts 2-3 weeks refrigerated. Essential for Gimlets, frozen cocktails, and anywhere you want lime flavor without the inconsistency of fresh juice.
