Method

  1. 1.Bring water to a simmer, add torn fig leaves.
  2. 2.Simmer for 5 minutes to release coconut-vanilla aroma.
  3. 3.Remove from heat, stir in sugar until dissolved.
  4. 4.Steep an additional 20 minutes.
  5. 5.Fine strain, bottle, and refrigerate.

Notes

  • Unique coconut-vanilla-green aroma — a chef's favorite ingredient.
  • Use in tequila cocktails, Negronis, or with sherry.
  • Fig leaves must be pesticide-free — forage from a known tree.
  • Lasts 2 weeks refrigerated.
