Ingredients
- Sugar500 grams
- Water500 ml
- Fresh Fig Leaves6 each
Method
- 1.Bring water to a simmer, add torn fig leaves.
- 2.Simmer for 5 minutes to release coconut-vanilla aroma.
- 3.Remove from heat, stir in sugar until dissolved.
- 4.Steep an additional 20 minutes.
- 5.Fine strain, bottle, and refrigerate.
Notes
- Unique coconut-vanilla-green aroma — a chef's favorite ingredient.
- Use in tequila cocktails, Negronis, or with sherry.
- Fig leaves must be pesticide-free — forage from a known tree.
- Lasts 2 weeks refrigerated.
