Method

  1. 1.Toast cloves and allspice in a dry pan for 1 min.
  2. 2.Add spices, lime zest, and ginger to rum. Infuse 24 hours.
  3. 3.Strain out solids. Make a simple syrup with sugar and water.
  4. 4.Combine infused rum with syrup and almond extract.
  5. 5.Bottle and refrigerate.

Notes

  • Essential for tiki drinks. Lasts 4+ weeks.
