Ingredients
- Overproof Rum250 ml
- Lime Zest8 each
- Whole Cloves15 each
- Allspice Berries8 each
- Fresh Ginger30 grams
- Almond Extract0.5 tsp
- Sugar500 grams
- Water250 ml
Method
- 1.Toast cloves and allspice in a dry pan for 1 min.
- 2.Add spices, lime zest, and ginger to rum. Infuse 24 hours.
- 3.Strain out solids. Make a simple syrup with sugar and water.
- 4.Combine infused rum with syrup and almond extract.
- 5.Bottle and refrigerate.
Notes
- Essential for tiki drinks. Lasts 4+ weeks.
