Ingredients
- Sugar500 grams
- Water500 ml
- Dried Chamomile Flowers20 grams
Method
- 1.Bring water to a boil, remove from heat.
- 2.Add chamomile flowers and steep 10 minutes.
- 3.Fine strain out flowers, discard.
- 4.Return liquid to heat, stir in sugar until dissolved.
- 5.Bottle and refrigerate.
Notes
- Honeyed, apple-like floral sweetness.
- Use in gin or bourbon sours, or with lemon and honey.
- Over-steeping turns it grassy — 10 minutes is the limit.
- Lasts 3 weeks refrigerated.
