Method

  1. 1.Bring water to a boil, remove from heat.
  2. 2.Add chamomile flowers and steep 10 minutes.
  3. 3.Fine strain out flowers, discard.
  4. 4.Return liquid to heat, stir in sugar until dissolved.
  5. 5.Bottle and refrigerate.

Notes

  • Honeyed, apple-like floral sweetness.
  • Use in gin or bourbon sours, or with lemon and honey.
  • Over-steeping turns it grassy — 10 minutes is the limit.
  • Lasts 3 weeks refrigerated.
