Blueberry Simple Syrup

Ingredients
- Blueberries500 grams
- Sugar500 grams
- Water250 ml
- Lemon Juice0.5 oz
Method
- 1.Combine blueberries and sugar in a saucepan.
- 2.Muddle lightly to burst the berries.
- 3.Add water and heat over low-medium until sugar dissolves and berries release their juice.
- 4.Simmer gently for 10 minutes.
- 5.Remove from heat, add lemon juice, and let cool.
- 6.Strain through a fine mesh strainer. Bottle and refrigerate.
Notes
- Lasts 2-3 weeks refrigerated.
- The lemon juice brightens the flavor and helps preserve the deep purple color.
- Beautiful in gin cocktails, lemonade, and as a base for blueberry-lavender drinks.
