Method

  1. 1.Combine water and sugar over low heat, stir until dissolved.
  2. 2.Add Earl Grey tea bags (or 30g loose leaf).
  3. 3.Steep for 10 minutes — taste frequently to avoid bitterness.
  4. 4.Remove tea, strain if using loose leaf.
  5. 5.Bottle and refrigerate.

Notes

  • Used in the Artesian Champagne Cocktail.
  • Lasts 3-4 weeks refrigerated.
  • Can also use fresh bergamot zest if available.
