A classic French café tradition — the refined cognac cousin of Irish Coffee.
Ingredients
- Cognac1.5 oz
- Hot Coffee5 oz
- Demerara Sugar1 tsp
- Lightly Whipped Cream1.5 oz
Method
- 1.Add demerara sugar to a preheated mug.
- 2.Pour in hot coffee and stir to dissolve.
- 3.Add cognac and stir briefly.
- 4.Float lightly whipped cream over the back of a spoon.
Notes
- Use a quality VS or VSOP cognac — the coffee won't hide a bad spirit but it will mask subtleties of an XO.
- Some versions flame the cognac on a spoon over the coffee before adding — dramatic but optional.
