A classic French café tradition — the refined cognac cousin of Irish Coffee.

  1. 1.Add demerara sugar to a preheated mug.
  2. 2.Pour in hot coffee and stir to dissolve.
  3. 3.Add cognac and stir briefly.
  4. 4.Float lightly whipped cream over the back of a spoon.

Notes

  • Use a quality VS or VSOP cognac — the coffee won't hide a bad spirit but it will mask subtleties of an XO.
  • Some versions flame the cognac on a spoon over the coffee before adding — dramatic but optional.
