  1. 1.Combine pisco, lime, syrup, and egg white in a shaker — no ice.
  2. 2.Dry shake vigorously for 15 seconds to emulsify the egg.
  3. 3.Add ice and shake hard for another 12 seconds.
  4. 4.Fine strain into a coupe. Dash bitters on the foam in a pattern.
