Pisco Sour

Ingredients
- Pisco2 oz
- Lime Juice1 oz
- Simple Syrup0.75 oz
- Egg White1 each
- Angostura Bitters3 dashes
Method
- 1.Combine pisco, lime, syrup, and egg white in a shaker — no ice.
- 2.Dry shake vigorously for 15 seconds to emulsify the egg.
- 3.Add ice and shake hard for another 12 seconds.
- 4.Fine strain into a coupe. Dash bitters on the foam in a pattern.
